Louise is an enthusiastic and accomplished cook who loves to share her passion with family and friends. With seasonal foods and ingredients from the house garden she can prepare a superb meal on short notice, able to be served either in the Cottage or shared with the family at the refectory table in the main house.
The following are examples of some of Louise’s favourite dishes :
Spring/Summer 2011
Entree:
Caramalised onion and feta tart
Fresh asparagus with Hollandaise sauce
Whitebait fritters with fresh white bread and butter
Main:
Fresh Salmon Fillets enlivened with a Lime Hollandaise on a Tomato Concasse.
Tarragon Chicken Breasts, on a lemon rissotto.
Beef fillet with bordelaise sauce, served with home grown new potatoes, broadbeans and grilled vine ripened tomatoes.
Pudding:
Summer pudding made with seasonal berries
Rhubarb and berry crumble
Fresh lemon tart with homemade ice cream
Platter of New Zealand cheeses served with homemade quince paste
Louise’s fabulous food can be accompanied by the very best of New Zealand wines selected from local award winning vineyards, at an additional cost.
